My brother in law has a green egg and uses a chimney. Why wouldn't it work for ceramic?

My opinion only. A chimney gets the coals too hot too fast. I find it harder to regulate the temp. Sure, if I was just going to get it super hot (700*) to grill a steak it would work for sure. However, if I am smoking ribs at 225* I don't want to overshoot, because ceramics are hard to bring the temp back down.
