my grandma used to thinly slice onion, tomato and cucumber and mix it with oil and vinegar and lots of pepper. it was delicious.
This. My mom made this growing up. Sometimes she'd get lazy and just use italian dressing. Still damn good during the summer, especially with maters and cukes from the garden.

Regarding the post about tomato/cucumber/onion salad with vinegar, add a dash of sugar to that.
Or, go online and google Babe's salad dressing and follow the menu. Best salad dressing I have tasted in over my 70+ years on this earth.
And whatever y'all decide, fried hot water cornbread makes any meal better. Especially with purple hull peas.

Reminds me of summer growing up. Now that it's tomato/cucumber time in the garden, we eat this a couple of times a week. Also add in some herbs from the garden as well
It's hard to beat field peas though
