So many good options to choose from, but for me the best I ever saw in person was '97 Florida at Tiger Stadium.
It was my freshman year, and as a member of Tigerband, it's still the loudest I've ever heard the stadium at field level in my life. Somewhere in my garage I still have a piece of the field and the goalpost foam from that night.
I also still have great memories of eating gator at The Chimes after the game and watching Sports Center just go nuts about how we took down #1 UF. Such a great night!

Was in Bryant Denny for 2019. It was more sweet than the natty, given our history with them over the last decade and the arrogance their fan base carried into that game

LSU was coming into that game after a 1 point win over Vanderbilt where they needed a blocked extra-point to get the 7-6 win. Needless to say, given Florida's dominance of LSU over the last 7-8 years, expectations for an LSU victory that night weren't very high.
Still, the crowd was fired up to start...as was the LSU team. Evidenced by the fact LSU was rolling on their first drive of the game...until Mealey fumbled in the Florida red-zone. The collective thought was "shite! There went our chance to seize momentum".
But then something magical happened. Florida went 3 and out. Faulk nearly returned the punt for a TD. When he didn't, Herb Tyler scored a TD on the very first play of the drive. LSU then intercepted Florida on the next series and scored again. At that point the collective thought among those in attendance was "Holy shite! Could this happen?"
That cautious optimism hung in the air the rest of the half...until Florida promptly tied the game on their first drive of the 3rd Quarter. Everyone thought it after that TD, but didn't say it: "Alright. Here's where Florida gets their shite together and puts LSU away." But that didn't happen...which led to one of the best 4th quarters in LSU history.
Donaldson gets a pick 6 to put LSU back up. With the crowd already going nuts and everybody wearing purple and gold thinking "this COULD happen", Bo Carroll fumbles the ensuing KO and LSU scores again to make it 28-14. From that point on NO ONE sat down the rest of the game as the reality of "this IS going to happen" slowly started to set in.
In nearly 40 years of attending games, that still remains the most fun night in TS (even though Florida in 07 was the most surreal and exhausting night spent as a fan in that stadium)
ALL OF THAT SAID, the 2019 victory over Alabama is at the top of my list. LSU was having a magical season led by what was looking like the consensus player of the year. But we had seen great LSU teams before unable to get past the Alabama road block. Once the clock struck zero in that game and LSU had won there was just an immense sense of relief. FINALLY! I know he gets a lot of criticism here, but Gary Danielson said it best following the game: "LSU knew they couldn't go around Alabama. They had to go through them" (to win a championship). And that is what LSU did." The raw emotion on the faces of the players and coaches following the win showed you just how badly everyone associated with LSU wanted to win that game and how much relief they felt to finally get it done.

If we are talking about in-person I was not fortunate enough to be able to attend any natty or playoff games.
Tennessee 2000 holds a special place in my heart as that was my freshmen year and I was in attendance.

2014 v. #3 Ole Miss, I was a senior and the last few seasons had been rough. In classic Miles fashion we won 10-7. First and only time I have ever stormed the field.
2019- V. Oklahoma, having victory beers midway through the 2nd quarter in a game that sends you to the natty is an incredible stress free feeling.
Throwback: 2000 v. Alabama, I was 8 years old and its the first game I really remember most of the game and fell in love with LSU. My pawpaw and I sat like 5 rows up behind the LSU bench. Several students in hard hats ran on the field in yellow hard hats and mooned the bama huddle. One of them pretty much was tackled by security in my lap

Georgia 2003-Skylar Green caught that TD pass right in front of me.
Ole Piss 2003-When Eli got stepped on and fell. Their fans were so devastated after.
2003 National Championship...no explanation needed.
