Going to Lake Travis (Austin Area) with extended family this Summer, 12 people. Mostly adults. Right now this is what we have planned:
Winery tour in Fredericksburg
Renting pontoon boat
A day in Austin (no specific plans)
A day in San Antonio (no specific plans)

What are we missing?

Maybe a night at Gruene Hall.

Floating the Comal?

How many days are y'all going? You've got a lot on your list. Very easy to spend a whole day in SA. Just remember that it's a huge tourist destination and will be crowded in the summer.

Enjoyed Beers at barking springs, but that’s quite a ways into town

Balcones Wildlife National Preserve is nice, especially the Warblers Vista Trail. Its in the hills above lake travis but in the summer it may be too hot. The drive to the trail along fm1431 from Lago vista is really nice and then turn right along Cow Creek Road, it feels like you are in the middle of nowhere.

Enchanted Rock is nice to hike up but again, the heat.

Also, Jester King Brewery and Treaty Oak distillery, both on ranch like settings, are pretty nice places to spend a few hours.

Hell or Highwater Brewing in Liberty Hill has solid beer and food.

I know you are doing wineries in Fredericksburg but Bankersmith on Old San Antonio Road is a cool, remote place with good food and drink. Just down the road is Alamo Springs Cafe (adjacent to Old Tunnel State Park) that has a great burger. And in the same area is Cartoon Saloon which is a bit kitsche but still kind of cool.

That's quite a drive from Lake Travis. There's tons of things to do in the Hill country. A lot of good advice above. I wouldn't waste most of the day drive to and from San Antonio.
