Anyone throw whole pieces of chicken in gumbo?

That’s the only way I do a simple quick gumbo. Cut up a fryer and let it simmer with the other ingredients for 1 hour.

Every time. Bone-in chicken thighs (skins removed) go in the gumbo. I debone once the meat is ready to fall off the bone after cooking a while.

I buy a package of chicken necks to make the stock, but I brown those first under the broiler.

I start off my gumbo with whole pieces cut up like I was going to fry chicken. I do season and brown the chicken off a bit prior to cooking down my trinity in the roux.

I'll cook the chicken in the gumbo until the meat starts to pull from the bone, remove it to cool, pick the meat off the bone and put it on the side until the gumbo is finished cooking, then add it back to the pot. That way it doesn't cook down and break up more.

I don't like bones in my gumbo.
