2022 self cooking challenge

in 2021, I fell out of love with cooking. Long story short, I left a demanding shitty job to one that is allowing me more time do focus on things that I want to, and not worry 24/7 over what mood my boss is in.

I'm going to take one weekend a month and try to do some "long format" cooking. I guess this would be anything that takes at least 4 hours. I'm asking for the F&D board's help to come up with ideas.

Let's rule out gumbo and smoking anything. Pretty sure I can cook gumbo with my eyes closed and have mastered brisket, pork (ribs and butts) and chickens on the pit.

For January I'll be doing Cassoulet. February I'm going to try a neapolitan red sauce. So I've got to come up with 10 more dishes to try for the year.

Other suggestions that I may swap out or attempt as there are more than 12 days to cook in a year:

Beef Braciole

Ridiculously daunting Coconut Cake

Pastitsio

Tortellini - I've got a lobster filling recipe in a notebook somewhere I'll have to dig up for this.

Guiness Pie

Tamales

Mother Sauces

Croissants - This is the most intimidating thing on this list. not sure if I'll get to it this year...

Chile Colorado

Scotch Eggs Basic recipe. With eggs, I think less is more if you use a quality egg.

Just realizing the kebobs aren’t long cooking, but yeah, incorporate them into a themed meal.

Homemade birria tacos or stew takes while. I'd say definitely over 4 hours including prep and simmer times.
