Repeating some listed by others:
Catch-22 by Heller
Big Trouble by Dave Barry
As mentioned by others early Carl Hiassen is great, but he falls off eventually.
Douglas Adams (Hitcherhiker's Guide and Dirk Gently)
Good Omens by Pratchett and Gaiman
Terry Pratchett in general

When I saw the title I clicked to recommend Confederacy of Dunces.
As someone who grew up in working class New Orleans it was fricking hilarious. Filled with tons of laugh-out-loud moments.

Highly recommend the Provence series by Peter Mayle.
A Year in Provence, Toujours Provence, Encore Provence, etc. Non-fiction, great descriptions of life in Provence through the eyes of a Brit expat. A lot of the humor arises from the clash of cultures, expectations, work ethic, etc. A very addictive set of books!

I found the Fletch series to be pretty funny
Gregory McDonald wrote close to a dozen of them.
