I think someone might save her or something. I think they're going to make some changes to the RW. Maybe instead of Cat being undead she just gets whisked away but turns bat shite crazy.

That wouldn't surprise me one bit.
UnCat would be very very difficult to pull off effectively IMO.
Can't remember, but did S2 make any references to Lord Beric Dondarrion??? I think we'll have a good idea if they're going to change UnCat if Lord Beric isn't a resurrected demon fighter.
Even if she is "undead", she won't be nearly as horrifically zombie like as she's portrayed in the book imo. Just don't see the producers reducing that actress to that on screen imo.

Beric really only looks a little battered up in the pictures I've seen of him. Not like the zombie esque description we get from Arya in SOS. I'm leaning towards Catelyn just going crazy.
