I agree. I thought it was one of the most difficult challenges on a cooking show that I've seen in a while. Quite different from making something "similar" or making something up with ingredients.

I loved this. As an outsider, I was thinking I would love to go there some day.

With that said, I think some of you who are critical of the New Orleans portrayal are possibly too close to the city to see it from an outsider's perspective. Even though I went to LSU, I have spent almost no time in NOLA. This show definitely draws me there.

Even the contrived bayou thing partially portrays the mystique and uniqueness of Louisiana.

Good points.

You should plan a trip to Nola and hit up Commander's while you're there. The show definitely promoted the restaurant and, in a way, Emeril's and PP's restaurants.

I wanted to hear more from Paul. He is rarely on TV except for PBS.

Emeril did most of the talking.

Chef Jamie was a great one too, sad he passed before his time.

I'd like to do that someday.

I have kids at LSU, so I get down there frequently, but it is too difficult to fit NOLA into my short trips.

I met him when I was working at restaurant depot and he was really friendly and outgoing. Gave me some tips on cooking and all.

But then again, I am an accountant. Not a CPA yet though.

I worked along side him at several NRA shows a while back. He is a nice guy, but has had health issues. I was happy to see him off his scooter and only using a cane.

I am suspicious that he talked on the show about as much as he ever does anymore, unless you are really close to him.

He has always seemed to me to be the kind of guy who is content to let others do the talking if they want to talk, and that table was full of folks who liked to talk. IMO it was a crowd you would need to break into the conversation to get your opinion stated, or story shared. Then whatever you said would be subject to editing.

Maybe he just got edited out.
