I think when they were asked to make gumbo, making a traditional gumbo was safe, but stupid. There are a ton of great gumbo's here locally, and by and large everyone has their personal favorite. I think the point was to step away from that.
Last nights episode was great. I can't even imagine how tough it must be to replicate something on taste alone.

Perhaps so, but I thought Justin's concept with the kale was a good one considering the perimeters given. Maybe it didn't rate high enough in flavor. He certainly didn't get a negative response or not one we saw. Neither did Sichel for the smoked oyster. They were just in the middle of the pack which was fine.
I hope the next episode is as good as this one was. The first two were awful in my opinion.

I noticed in the next one they are dining at Tan Dinh. It should be VERY interesting to see how they handle this.
It's funny that most of those contestants likely spent time studying creole new orleans cooking, and neglected the huge Vietnamese culture we had. You likely wouldn't know it unless you are local and spend a lot of time here.

Watching last night sure had me craving Commander's. That show probably got them some reservations.

There's something missing from this season.
I'm not seeing the ultra transcendent "Voltaggio brother" talent or the domination from the last few Asian chefs that have won recently.
And in typical Top Chef producer fashion, they've chosen not to eliminate the obvious weakest chef yet (the Puerto Rican lady from NY) and have pushed an intriguing cast member off (the surfer douche from Philly).
Last night's Commander's challenge was different, but replication is kind of boring to watch on TV. I watch Top Chef to see creative talent more often then not.

oh man yes! she should have gone home on the food truck episode. his dish was admittedly bad, but she all around does not need to be there. She was bottom of the barrel in ep 1 and 2

I didn't think he looked perturbed. I thought he looked overwhelmed and concerned about the challenge and a bit uncomfortable.

He made the "we don't get coffee together" remark followed by the "He won the James Beard Award over me last year". I thought his facial expressions made him looked perturbed especially since it may have been filmed before or after going to Commander's. Very well could have been overwhelmed or editing.

I wouldn't read into that, although it did give the impression there was a rivalry there. I think it was just editing a throwaway remark to push the storyline for that particular episode.
Most chefs are pretty chummy with one another. All the southern guys and gals up for Beard awards and who are just up there for the awards, go out for a huge boozy lunch before the awards. So I doubt there is any animosity. Plus, most know the Beard awards are a you get nominated a few times before you win.

Yeah, I heard that, but I just took it that they weren't social friends and I knew he was also up for the award. I didn't think much of it. I was talking about when he was sitting at the table at Commander's.

That Commanders challenge was incredibly difficult if you ask me. You have to duplicate one of 4 dishes after tasting it only once. To make matters worse, the original version is plated up beside your entry. To make it even worse, the judges include the person who invented the dish.
I can't imagine that any of the chefs weren't intimidated beyond belief.

They did something similar a few years ago at Le Bernardin. Those are the two most straight up cooking challenges over course of show's history. Other things like cooking in a dessert are gimmicks.
