Unsure if you have tried these. Some call them "alligator eggs" and others "armadillo eggs", nonetheless, they are very, very good. You will need, de-boned chicken thighs, pan sausage of your choice, we like hot, chive and onion cream cheese, bacon and jalapenos.
In general, 1lb of sausage and one 8oz container of cream cheese will fill about 10 thighs.
Brown the sausage with jalapenos. After draining, add the cream cheese and heat to combine. Lay out "seasoned" chicken thighs and lay in sausage mixture in middle and roll, finishing with bacon strip outside with a toothpick too hold together. Cook until inside is 165 degrees. Whatever, he looks aged, beyond his years! This guy is gonna be a man, amongst boys. Kinda reminds me, in the age aspect, of Greg Olden, the center from Ohio State, that was drafted by the Trail Blazers. I just hope his career doesn't go the same path.
