Anyone have any new tailgate food ideas?

We travel from Shreveport and bring a grill but I'm just tired of the same ole things. Anyone have ideas on things that are easy to pack and prepare?

Got any speckle trout or catfish. We do a a fish fry for one game, with hushpuppies, fries, onion rings, etc. Not much more fuss than a jambalaya, red beans, gumbo, etc.

My boyfriend bought a "flying saucer" fryer on sale at Academy last year. He fries chicken strips, fries, fish, backstrap, pickles, etc. in addition to grilling chicken, burgers, and backstrap. We may fry some gator for the Florida game.
I also made cake pops for the last football game and they were a hit. I had 5 strangers ask me what they were and they were intrigued .

a friend showed me how to make jalepenos stuffed with cream cheese wrapped in bacon

Unsure if you have tried these. Some call them "alligator eggs" and others "armadillo eggs", nonetheless, they are very, very good. You will need, de-boned chicken thighs, pan sausage of your choice, we like hot, chive and onion cream cheese, bacon and jalapenos.
In general, 1lb of sausage and one 8oz container of cream cheese will fill about 10 thighs.
Brown the sausage with jalapenos. After draining, add the cream cheese and heat to combine. Lay out "seasoned" chicken thighs and lay in sausage mixture in middle and roll, finishing with bacon strip outside with a toothpick too hold together. Cook until inside is 165 degrees. These will go fast. Now you got me hungry! GEAUX TIGERS!! Through Thick and Thin

The simplest of tailgating fare is kabobs. The can be made in a kazillion different ways to satisfy even the most picky eater. Marinade your meats/seafood. Slice your veggies at home. Pack them in zipbags, then toss it all in the beer cooler. Skewer, grill, eat, and toss everything else in the trash. Then drink the beer. Jambalaya pots are heavy. Frick that shite.
