You dont miss out on any story stuff, there are certain shops in city that only people with the ultimate edition have access to. Theres like a tattoo shop, a couple of clothing stores and a garage or two.
Looks like the fun may be over. The leaker hasnt been heard from since early this morning and now the subreddit where everything was being posted to has been nuked.
I actually do hope the leaks are over, they showed enough to get me excited but I really want to discover most of the game for myself.

Some new leaks from today
I guess I should add that its doubtful these are from the latest build of the game. The UI seems mostly like place holders. We do know from one of the songs that plays on the radio on one of the leaks that it is at least from January 2025.

Couple of gameplay clips might have been leaked today along with the full map. First clip is Jason shooting some basketball at his safe house, second clip is some driving and getting into a fight with a UPS guy.
Rockstar is taking down the clips at a pretty fast pace but you can find the clips in the r/GTAunmoderated subreddit.
