Have you looked into Cartagena as well? Some of the properties are a little inflated but the place is blowing up like crazy ...

Would def recommend spending a few days in Chiang Mai. Try khao soi, you can only get it in north thailand and it was delicious.
Plenty of places to eat, drink, and party (Zoe in yellow). Also, the sunday night market in Chiang Mai was one of the better market experiences IMO. ...
