Go to any Excellence resort (I do like PM the best of the ones I’ve been to) over any Sandals resort.

Sugar Beach St Lucia and add the meal/booze plans. Resorts that are 100% AI are like going to Golden Corral vs a nice restaurant.

If it were me I'd be looking at Bitter End Yacht Club or Little Dix Bay on Virgin Gorda. The food will not disappoint. Sadly Peter Island has not reopened yet as it suffered extensive damage from Irma.
