Is there any benefit with booking a trip through someone like the Backbacker? Seems pretty simple to piece it together myself. Do they get preferred pricing?

I’m assuming you are talking about Backpacker? If so, while it’s an easy one stop shop, skiing trips are so easy to plan, you can do it yourself and cheaper.

I also have questions. Is it better to go over Christmas/New Year's break or Mardi Gras?

Also, took the family with younger kids to Steamboat a few years ago, any other suggestions?

Better snow at Mardi Gras, most likely.

Some times the package trips get cheaper lift tickets.

Their prices aren't bad if you just want to pay for the convenience. And there is some value in going with a group of people. (Instant friends).
They probably give you a discount on purchasing gear. I think the plane is chartered. So, that's nice. There may be some minor group rate discounts, too.
But, we usually plan and execute our own trip. It's usually cheaper, not hard to do, and we get to set all of the details.

Late Jan/ all of Feb/ Early March is the best time to go. Better snow base. Guaranteed open runs. No holiday traffic.
Mardi Gras is really only a Louisiana holiday. Everywhere else uses President's week, apparently. (The 3rd Monday in February.)
I think they overlap in 2021, 2023, 2026, & 2034.
When that happens, rates will be higher that week and crowds larger.

I've tried putting together the same package as Backpacker and have never been able to assemble a better deal when considering lift tickets, room, plane and transfer prices. The ONLY thing I have been able to better them on is equipment rental, so I just usually do that part myself. It's an add on to their packages anyway.

Something to add on is that if you book thru them, you get a bout a 15-20% discount on in-store purchases. If you are buying new gear, their prices are very competitive with online stores. Plus, they hold an in-store (optional) coordination meeting for all people who booked their trips about a week before the trip and that night, all purchases are like 40% off.
