I have done Pompeii as a day trip from Rome.
The first time I went to Europe in 1996 was on a Globus tour and we were taken there on one of their excursions.

It took all day but it wasn’t that bad. We left early in the morning and were back in time for dinner.

We used Positano Turismo last month for a private shuttle from Naples train station to Positano and also on the return 3 days later. We were very satisfied with the ease of communication and experience.

I was there back at the end of April. Rented a car and drove from Naples to positano. Personally I loved driving that route. My fiancée not so much. Lots of mopeds veering into the middle lane at blind spots so you have to be careful. But if with kids would probably just get a driver.

We will have quite a bit of luggage. 2 large bags, 2 small, 2 back packs and a stroller. Is there enough space on the train to hold all of our luggage?

Yes but getting all that on and off the train will be a PITA with little ones. The higher class ticket you purchase the easier it will be.

I don't think doing this with a 7-month old would work, but doing the Officio Scavi tour of the crypts below St.Peter's is really worthwhile (and only like $35/person).

Not sure if anyone has said it but if you go to Pompeii, get the bus up to herculaneum, (further up) I would say it's better preserved and not as busy.


Edit:

I'm also a sucker for a roof top bar, when I went I actually stayed at the Mercure Colloseo, they have a rooftop bar/restaurant with an uninterrupted view of the coliseum. At night it's a spectacular view, I actually proposed there after my plan A went wrong.

Yes.

I believe most children will be free or at least discounted on any train, so buy the best tickets you can get. First class is not much more than the standard ticket.
