I have a week in Switzerland planned and the End of the trip is a weekend in Paris
Help me fill in the week in between!
Just 2 people, rental car

Yes. Check out the Nice region, especially Eze. Search for Eze and there are a few threads about it in the travel board.

Are you interested in food? If so, I'd leave the Rivera for a separate trip and instead loop down to Lyon, then back up to Dijon, then Troyes, and on to Paris.

Go to Lyon. If you want to head south from Lyon, a trip down the Rhône to Avignon will scratch historical itch and also gateway to the fantastic wine regions along the Rhône.

I second Lyon. It has better food than Paris. Also Beaune and Avignon are great places.
