Need help/info with 10yr anniversary options

We just came back from Isla Mujeres and really enjoyed the trip. For our 10yr next May, we are looking for the same type of environment but less crowded. I have found 3 places that may meet that but I dont know much about them. Budget is around $8k w/ airfare. Please feel free to chime in for any other areas I can look into.

Choices:
Ambergris Cay Belize
Grand Cayman Island
Harbour Island, Bahamas

Any advice would be appreciated. Snorkeling, diving, Bar hopping in golf carts is also a plus.

Went to Puerta Vallarta for my 10th. Stayed at Casa Velas, an AI boutique resort for adults only. Highly recommended.

we did Harbour Island for our anniversary last year. stayed in an Airbnb and rented a golf cart. Didn't do much other than hang out at the beach and eat and drink. There is a dive shop that is part of valentines resort, and you can take a boat to go swim with sea turtles and the pig beach, but we skipped that since we had done it before.

The public beach access between pink sands and coral sands has a shack that serves food and drinks and you can rent chairs and umbrellas from.

The resorts have some good restaurants, Romora bay is great for a sunset dinner.

Everything is pretty expensive since it has to be brought over from the bigger islands by boat. When we got there they hadn't received their water shipment in a few days so we couldn't find bottled water, but our airbnb had a 5 gallon tank in the kitchen.

We went in late July last year and it wasn't crowded at all. I felt like we saw the same 10-20 people at every restaurant we went to over 4 days.

Look into the Exumas- we just got back. Spectacular.

We rented for the second time from this group- LINK They have smaller houses. Rent their boat and explore the islands, sandbars and cays. Incredible.

Spanish wells is right across from Harbour island. It’s where a lot of the locals that work on Harbour island live. I haven’t been there, but I assume it’s a little cheaper with the same great beaches.

Consider an AirBnB in Culebra, Puerto Rico. Very laid back and chill. Culebrita has one of the prettiest beaches I've been to outside of the USVI, and BVI. You can even see St. Thomas from the peak of Culebrita.

It's no frills, but perfect for an adult couple that likes a little adventure.
