One thing that always surprises first time visitors to Ireland is how good the food is. I felt like I was in comfort food heaven . So good. Especially considering you aren’t expecting much.

I can’t wait for comfort food. Any specific dishes I should order? Any good local beers besides Guinness? Oh I’m definitely getting rental insurance

This is pretty much what I did my first 10 day trip to Ireland:

We flew in/out of DUB.

Landed early in the AM, picked up our rental car and took off north.

Day 1: Newgrange, Boyne Valley then onto Belfast.
Day 2: Belfast
Day 3: Devils Causeway, Carrick a Rede, Dunluce Castle, Bushmills Distillery
Long drive through Derry & Sligo to Westport
Day 4: Toormakeady, Ballintuber, Galway to Doolin
Day 5: Cliffs of Moher, Tralee to Kinsale
Day 6: Kinsale, Cobh, Midleton, back to Kinsale for the night
Day 7: Cashel onto Dublin, turned in Rental Car
Days 8-10: In Dublin

I’ve since been back and other places/sights I enjoyed were-
(In no particular order)
Aran Islands
Adare village
Mizen Head Lighthouse
Drombeg Stone Circle
Ring of Kerry
Ring of Dingle
Skellig Michael!
Valentia (transatlantic telegraph cable landing site)
Clonmacnoise Abbey
Lots of old castle & manor house ruins
Taverns with the locals

I’ll leave Dublin alone other than saying don’t miss Kilmainham Gaol.

It really was something and it’s an important spot of Irish history.

Boxty - it's basically a potato pancake.

There's a bunch of different versions, but the one I enjoyed the most is a beef stew version. Similar to this: LINK

What’s so cool and interesting about the prison?

Kilmainham Gaol is where about every famous Irish person spent time in the quest for Independence.

It is also where lots of the 1916 uprising leaders were assassinated (my words).

If none of that does it for you, then lots of movie scenes you remember, from In the Name of the Father, Michael Collins, and one of the most underrated movies of all time, The Wind That Shakes the Barley were filmed.

Get tickets beforehand, the tour only takes an hour.
