I would also stop in Chatanooga on the drive up and do Lookout Mountain/Ruby Falls, which is great for young kids.
This is what I'm planning. Have free nights with Hilton coming out my arse so I'm thinking a night or two at the Embassy Suites there to make the initial drive up a little big shorter.
I hate long drives.

Do: Just a few of my favorites.
Chimney Tops Trail
Appy trail to Charlie's Bunyon
Fly Fish Little River between Townsend and Gatlinburg and catch a Brown Trout
Fly Fish the Chimney Tops trail at the trail head and catch a Rainbow Trout
Fly Fish the Chimney Tops trail from the trail just after the 3rd bridge up to the 5th Bridge and catch a Brook Trout to complete the Grand Slam (has to be all in the same day)
Cades Cove is very pretty, but extremely crowded, my suggestion is to take it until about half way and then take Parsons Branch unimproved gravel road to US129. Be warned US129 is a sports car and motorcycle paradise, you will be passed a lot on this very twisty road. You can either go into North Carolina and go into Joyce Kilmer which is also beautiful and pass the dam that Harrison Ford jumped off of in the Fugitive Dam or head across the Cherohala Skyway. Beautiful drive across the Skyway and is hardly ever crowded. If you really want a drive, head to Franklin, NC (eat lunch at Caffe REL except on a Sunday or Monday) and then make the drive to Highlands, NC. The drive from Franklin to Highlands has some of the best waterfalls in the region. If you don't want to go that far, from US129 you can hit the Foothills Parkway and head back to Townsend.
Don't:
All that tourist garbage in Gatlinburg/Pigeon Forge/Sevierville
The bears don't care about you, they run off for the most part when they see you. Have seen tons of them in the park and never had an issue.
