Dude, the Caribbean is a big place.
Are you looking for an all-inclusive, or a resort in an area where you might enjoy eating at various restaurants outside the resort? How long are you planning to stay? What's your budget?

To be honest I enjoyed the all inclusive. We went to sandals in Antigua 10 years ago. We thought about going back
But trying to see what else is out there .

Maybe try somewhere that you dont need to go to a resort. Curacao, roatan, puerto rico and turks and caicos all good options.

A cruise is a great option as well if you can’t agree on a spot. It’s a great way to get a taste of multiple islands.

We stayed at Somerset. The room was huge. It was a large bedroom, two bathrooms, a living room and dining area, a full kitchen stocked with Viking appliances and an outdoor patio overlooking the pool and sea. 1400 sq. ft total. I will stay there again

We have also stayed at Somerset and enjoyed it. IIRC, Bay Bistro is a short walk down the beach and it's an excellent restaurant.
