Keep your head on a swivel for sure.
I'd recommend hiring a driver, but whatever you feel comfortable with.
I'll throw this out there just in case you, or anyone else, is looking to stay away from the crowds. We spent the first week of our trip last summer on the north side of the peninsula, away from the madness of the Amalfi coast. Plug these into google maps and it'll show the actual house - 40°35'50.8"N 14°19'48.8"E
It was an airbnb run by a guy that manages several in the area. He was amazing. He set up all of our excursions, set up our cars/drivers for those, as well as from the Naples train station and back, and cooked our arrival dinner and another dinner for us during the week. Both incredible. The house had it's own pool on about 10 acres with a small lemon and orange grove. It looked out directly at Capri. The houses on that side tend to be cheaper and have more a little more room to move.
We did a private boat day from the Nerano marina all the way up to Maiori and back, with several stops along the way. It was a great way to see the Amalfi coast and not be caught up in the madness. It was peak summer when we were there too, so there were mobs of people in every one of those towns up the coast.
Just throwing this out there as a potential alternative that's a little less crowded.

Appreciate the tips. I’ve tried to convince Mrs jkyle that Sorrento would be a solid option but I’m losing that battle.
So far we plan on doing a cooking class near ravello and a private boat tour around Capri. We are bookending the trip in Rome with a couple days to explore there on the front end. May actually try my first 3star Michelin ranked restaurant . Place called La Pergola.

It is not a 3*** but the best restaurant I went to on the Amalfi Coast was La Sponda in Hotel Le Sirenuse in Positano. My wife calls it the most romantic restaurant she has ever been to, and she is an expert on such things. It is not lit with electricity, but with 400 candles scattered all around and it has giant picture windows overlooking the town on one side and the Mediterranean on the other. And the food is delicious.
They also have a great terrace bar overlooking the Med.

How did you go about getting a reservation at La Sponda.? I’ve kinda looked around on their website and even months out it says 0 availability. I’m wondering if their website is messed up or if they really fill up that crazy quickly.

Just checked their website, and it looks like a pretty standard MO:

Actually, not quite standard. Most very high end places release a month block at a set time. It could be lost in translation, but this appears to imply dates are literally released one at a time. But, the punchline is that you're going to need to set a calendar reminder for, let's say, 59 days before your desired reservation date, and then at 8am CST be ready to pull the trigger on the reservation.
ETA: If you want proof of concept, you'll notice that the last few days that have opened up thus far in September still have a few slots left.

I remember corresponding with them by E-Mail.
They asked a few simple questions such as where we were staying.
They wrote back promptly granting our reservation.
We went to the terrace bar a few times. We didn't stay at Le Serienuse, but we spent so much time in the restaurant and bar, I think the staff thought we were staying there. Maybe next time. It is a beautiful place.
