Does anyone think it might benefit us to wait to book international flights for this December, under the theory that prices may drop? Thanks a lot.

Is it over holiday dates or for anything that would drive demand? If over Holiday dates I recommend the sooner the better. If it's non-holiday dates then you could monitor it for some last minute sales, or book a refundable rate and if rate drops re-book at the cheaper rate.

No. Use Google Flights, and you can see how pricing changes a year into the future. It's going to depend more on the dates you travel and how long you stay.
Example: For a 7 day stay, from IAH to any airport in Tokyo (any airline, up to one stop), rates between the 11th of December and the 31st range from $1,429 to $2,534, depending on the day you travel. Prices drop to $830 on January 4 and 6th, and fluctuate between $1,163 and $2,180 between January 8th and 10th.
ETA: waiting for super cheap fares last minute, on a long haul flight (I assume you're not talking about Mexico or Canada) means you're going to be in the bottom of the fare bucket. Yeah, you might get a seat for a couple of hundred cheaper, but you're going to have no chance of picking your seat (without spending a decent amount of money to buy back up), which is ultra critical on long hauls.

When I see a flight that I like for what I think is a good price, I book it. I feel better having that taken care of.
