3-4 day trip with wife and 1.5 year old - outdoors

Wife is itching to go on a little trip next week during Mardi Gras break. (We're both educators).
She wants something a little outdoorsy since my son loves outside so much! I am not looking to spend a ton but maybe $1000-1500 or so.
I looked into last minute cruises but they are charging full price for a 1.5 year old which I find pretty crazy!
Thought about Arkansas or southern Mississippi but weather seems to be too chilly for water activities.
I am stumped. Any help?

If you can find a cabin at one of the Louisiana State Parks, a child at that age would be ecstatic.
Another option, but a seven hour drive, would be something in the San Antonio area. That region of the country is probably a bit warmer at this time of year.

I don't know about that
Central TX seems to run colder in the winter and hotter temperature wise in the summer vs NO.
Over the next 10 days they are about similar but the water in TX won't be warm until late May/June.
As for OP, I took my kid to Lake Tahoe around that age but the time of year you're looking for won't work for that. Only personal experience I have at the moment. Then again, the water isn't warm there ever.

Brushy Creek Guest Ranch in the Homochitto. Cabin rentals, a pond, creek, and all the outdoors you want. Shouldn't be too crowded right now. There aint shite to do if you don't ride a horse, fish, play horseshoes, hike/walk or drink and cook. But if any of those are in your wheelhouse, its a good spot.

Cruise != outdoors. It's an expensive hotel with a balcony and a pool.
Since the kid is under two, you could have flown to Costa Rica or Roatan with the kid in your lap, and have come in under $1500 with accommodation.
However, the time to figure out what you're going to do for Mardi Gras break is ... NOT four days before Mardi Gras.
