Which Apple laptop to get?

I’m locked in with Apple ecosystem
I’m looking to trade in my desktop because we don’t have room in the house for a desk. So what is my best option for:
Running:
Microsoft Office
QuickBooks
Effectively enough to maintain speed.
I don’t want to overpay for something I don’t need. I don’t keep pictures on my cpu and I don’t download movies.

Base model macbooks are fast enough

If what you listed above is all you need, then buying any macbook will be overpaying for something you don't need.

The new Air is positioned as the best all around macbook for most people
That said, if you can find a 2017/2018 MBP with a 256+ SSD for less, do that instead.
I have a regular MacBook that I liked at first and that is great for travel. But for everyday work the size is a bit small.

really comes down to screen size and how portable you want it to be IMO. If you don't mind a 13" screen, get the Air. IF you want a 15" screen get the base model 15" Pro. I've been using some flavor of a 13" MacBook for 8 years now. First an Air, now a Pro.

Well the ecosystem that I run my business from is Apple. They are reliable products and easy to use. I meant that I don’t want to overpay for more storage/memory than I need.

SSD is a requirement in any computer now and so is 8gb of ram

Is connecting it to your HDTV and using a wireless mouse & keyboard an option?

It's a great option. You might even realize that it's a better option than being bound to a desk and small screen.
I know I did. From this point on all my PC's will be displayed on the living tv.

This is purely anecdotal but I've only personally owned 2 macbooks since 2007. I currently have an early 2013 Pro and I love it. The only reason I got a new one is that I dropped my first one and fixed the screen, but it became too old to update. Otherwise, it still runs like a champ. I'm able to do anything I need on my pro and it's still as fast as day 1.
For comparison, my SO has had a "regular" (I'm not sure what brand it is) laptop for half the time and it has become a paperweight.

My SO is also forced to use a work-issued pc. Goes thru the hassle of moving to a new computer every couple of years.
Not having to think about my computer that often is worth the price I paid for my Mac.
