I had PS Vue for a while and really enjoyed it. Once it was pulled, I switched to Sling, and its got the channels I want, but the guide/setup is awful. Any other recs?

Youtube TV, Hulu Live and ATT Now are the primary alternatives. I'd suggest waiting and seeing how things shake out post corona. Traditional cable providers are hemorrhaging subscribers and this is expediting the separation of entertainment from sports. We might end up in a place where something like FuboTV (sports only) plus Netflix/Amazon/Hulu/D+ makes the most sense.

Like you, I really enjoyed PSVue. I am now on YouTubeTV and it is a good alternative. The menu still isn't as easy to use as PSVue, but they have made it better recently. I would recommend it.

Hulu Live has been good. Don’t particularly care for their interface, but I watch it through “Channels” app anyway, which is awesome.

Spectrum allows me to stream my entire cable package and didn’t make me buy a Box I just use Roku. It’s $45 a month and has every cable channel including nfl network.
