Currently have the Sony. Looking at getting a new pair soon leaning towards the Bose not really satisfied with Sony. Anyone have the Bose? Do they actually cancel out the noise ?

Which Sony's do you have? My WH-1000XM3 are pretty incredible.

Same. Mine are probably one of the best pieces of tech I own.

I have the bose 700 headphones. They are very nice and the noise cancelation is excellent. Pairing is easy with my iphone and computer, and 20 hours between charges is pretty good for me.
Some nice features: you can hold a conversation without taking them off by just pressing a button. Swipe control for volume and to advance music tracks. Also great sound for phone conversations.
I would buy again.

Don’t sleep on the Jabra Elite 85h. I owned the new Bose headphones and returned them. I didn’t care for the fit and had connection issues.
The new Sony’s are supposed to be great as far as comfort goes but have poor call quality (if that is important to you).
The Jabra’s (I own) feel great, offer tremendous battery life and have the best call quality of any headphones.

I bought the Sony 700N for a for a business trip to Japan back in in July 2019. They paled in comparison to the original OTE Bose I gave my girlfriend when the Bose NC first came out.
Maybe others have caught up, but my Sony's were even close. But they were a lot cheaper. YMMV.

In my experience Sony ANC is very good, some would argue better than Bose.
Where Bose is not matched, IMO, is in call quality. I know plenty of of people swear that Sonys are fine for calls, but the only flawless performance suitable for business I've found is Bose, followed by AirPods.
I hate being in the middle of shite talking some opposing counsel only for him to tell me he can't hear me and ruin my whole pitch.
If breaking up on a call every once and a while isn't a big deal to you then I think Sonys might be the best all arounder.
