Some apps will not allow you to screen mirror via an HDMI adapter from an iPhone to your TV. Is there a way to fool the apps so this can be done?

Why aren't you just casting it from the iPhone/iPad using Chromecast or Airplay?
HDMI includes HDCP (high def copyright protection) specifically designed to stop what you're trying to do.

Don't you have to have wi-fi to do that? When I'm at deer camp, I don't have wi-fi. I'd like to just use my phone's data plan and put it on the TV. I think some apps block you from doing that.

No, depending on your TV. You have to have a newer Chromecast to use it without Wifi see here for Chromecast. I just bought a 55" TCL with all kinds of connectivity for about $250.
However, can also just turn your phone into a personal hotspot and connecting the TV to the phone (be aware, using data as a hotspot versus using data only from the phone may not always be unlimited depending on your carrier.)
I'm guessing the app you're inquiring about is Hulu; compared to Netflix and Amazon Prime Video, Hulu is by *far* the most restrictive on what it allows you do to through with devices/locations/casting etc.

You can get a cheap wifi router and set up a local WIFI network, you just won't have internet connectivity. It will be useable to mirror your screen but the utility of the smart tv or Chromecast/Roku/firestick/apple TV will be limited to only that.
