IPADS for my kids for Christmas

Looking to get a couple ipads to replace the amazon fire tablets my kids have. Looking at the 9th generation but can't decide if i should get 64 or 256 gig version. The 64 gig is about $150 cheaper. How quickly does the memory fill up on these things?
ETA: kids will use them mostly for games/watching shows.

WiFi only or cellular models?
If they’ll be downloading a bunch of shows/movies to watch on the road, you’ll want the bigger memory. It fills up quickly with things like that.
If it’s cellular or they’ll hotspot to a phone and stream everything, then the memory is less critical. It will still fill up, but the system does a decent job of managing/offloading apps that are not often used.

It fills up fast once they start playing games like Roblox and Minecraft. My kids also like to take a lot of pics and videos that eat up space quickly.

Wifi only. They'll hook up to our hotspot on road trips.

Any way to find the storage on the tablets and see how much they have added to them?
You should also look into available storage space on the 64G version, a good chunk of that will be the operating system, and apps that come with the iPad
