What app or internet TV should I use to get as many live sporting events as possible? Or should I get a satellite service? Thanks

YouTube TV should cover anything you need. You can use that login for the ESPN app as well.

I don’t believe that is legal. YTTV specifically says no in it’s terms and says it is for personal use only. I found this: LINK

Might need to check the ToS around things like YouTube TV. Not sure what is legal and what isn't. But YTTV has a 4k add on that also gives you unlimited streams in the same location. So you could cover plenty of TVs with YT.

You're gonna be in a different boat form individual users. You would need a commercial license which are more expensive. When I worked in restaurants in the 90s and early 00s using programmed cards to get "free" satellite TV was really popular.
