Tailscale is free and pretty easy and avoids the security issues of poking holes in the firewal
Tailscale is great. I use a mix of it and NGINX reverse proxy

A lot of this is going to depend on your budget. If you're willing to spend a little money I would look at building an Unraid server. If you'd like me to help walk you through the process let me know and I can get you my contact info.
I'm currently running a 92TB Unraid server that I built and setup myself using mostly reddit and youtube videos. It doesn't really require any coding, unlike some of the other Linux based options out there. I currently use it as a Plex/Jellyfin server with all movie and TV downloads automated and a website for all of my friends/family that I share access with to easily request new content. I also use it for Nextcloud (a self-hosted OneDrive/Dropbox alternative) and Bitwarden (a self-hosted password manager). I'm not big into photos, so I just use the Nextcloud storage for that, but I know I could self-host Immich or similar programs if I wanted.

TrueNAS has come such a long way in its "ease of use" and with its massive performance benefits, there's not much reason to use it over unraid anymore.
Especially since TrueNAS can be used without paying a dime for a license.

I don't have any experience with TrueNAS, so I won't crap on it. What I do know is that I've been running my Unraid server for over 3 years now without any issues with the OS. Performance has never been an issue as it's always performed as expected with the hardware I have. Yes, it costs money, but you can get started with as little as $50 to see if you like it.
I would recommend doing a little research on Unraid vs TrueNAS (I think these are your 2 best options) to see which would work best for your current needs, as well as how you think you'll upgrade/expand your storage over the life of the server.

JFC! …I have a Synology 16TB in SHR.

I've got 100TB total, but only ~45GB "useable"

And I’m getting anxiety because I only have 3tb remaining.
It makes me irrationally angry thinking how expensive it is to upgrade to the 6 or 8TB Synology drives that only provide 25-50% more storage.
