Helping An Elderly Lady with Cancer (In Remission) Build a Gaming PC

So, a lady that has been very kind of to me loves to game. She doesn't play a lot of AAA titles, but loves PC games. She recently had a double mastectomy and is undergoing her final 11 radiation treatments over the next six months or so. Out of curiosity I had her benchmark her system for me, and the results were...not good.
It's that same old Best Buy special that you can't upgrade, doesn't perform well and is vastly overpriced.
Her current "rig" is on the left and one of my ideas is on the right.

Obviously it's a work in progress.
The Build as it stands
Christmas and my own build is going to tap me out. There are some other folks that might donate a few shekels, but the majority of this is going to be on me. I'd like to get to around $450 all in, without buying hot parts off craigslist.
This lady sends me cookies and cigars regularly. And she's so very sweet. I want to do this for her.
Y'all have any cost saving without losing too much performance ideas?

Absolutely no reason to have 16gb of ram. Throw that money at a bigger SSD

Use r/buildapcsales to find deals and r/hardwareswap for used parts. I was able to build this in August for about $500

Yeah, but she will view going from 12GB to 8GB as a downgrade, and I don't want to explain it to her for a $15 difference.

That's a 580 for 159 so not much more for a good bit more performance.

i just replaced a MSI GTX980 with a RTX 2060 Super. i could give you a real good deal on the 980 if you're interested.
