Ecobee or Nest?

I tried to search the board so I’m sorry if this has been covered recently. The most recent thread the search pulled up was 2019 so I know there’s probably more insight now.
The biggest thing I need is auto heat to cool and vice versa, which if I’m not mistake, both do that.
Other than that, what are the pros and cons of each? We have 3 units, and need to make this a little more streamlined....

I have used the same nest for 6 or so years and moved several times. It's been excellent. I am in the same boat as you though. I might switch. Moving in 1 week and unit is 2 speed AC. I read very good things about ecobee.

Functionally, my Nest thermostats work great. We have a zoned system, which results in two thermostats, one upstairs and one downstairs. I added two remote temperature sensors to each and that helped to make the schedules work even better. The features you are looking for are built-in.
That said, we’re moving to something else - probably the ADT thermostat (Honeywell guts). I don’t like the fact that Nest bugs me every time I open the app to get a Google account (I don’t want one), and I hate that as a Google company, the thermostats cannot integrate with any non-Google automation platform.

EcoBee with sensors in rooms that matter is the ticket. I've had mine on 2 systems for several years and haven't looked at it in a while its so efficient.

How does that work? With AC will it lower the temp until both sensors are at that number or does it average them some sort of way?

It averages them, but with options.
You can create "comfort settings" which are basically just temp presets. When you create a schedule, you assign a comfort setting to a particular time, ie. "home" from 5pm to 10pm, "sleep" from 10pm to 6am, "away" from 6am to 5pm, or whatever. Then you can choose which sensors "participate" in which comfort settings. For example, maybe I don't want a bedroom sensor to "count" in home mode, but I do want it to count in sleep mode.
Then there is also an optional "follow me" setting which causes each sensor to detect your presence and only count those when determining the temperature.
It sounds complicated, but once set it does a really good job.

This is why I'm leaning Ecobee. We've got a bonus room that gets toasty in the summer.

It might help a bit, but you will still need to adjust your vents to even out temps if that's the main problem you have. At least having a sensor in multiple rooms can help with this.
I'm waiting for more competition in the smart vent market so that these adjustments can be automated.

I have looked at those and spoke to a couple of AC guys, and I think those manufacturers just need to be careful about making sure the system always allows enough overall airflow that it doesn't frick with your main unit.
