From someone with a shallow understanding of this situation, why would he sign a new deal after making it completely clear he wanted to go to Madrid and would have been able to do so without issue next year?

I'd assume because he's one of the very best in the world and being paid like it starting now at a place he's comfortable outweighs another season on the cheap and moving next year.
He'll still just be hitting his prime especially for a keeper when this contract ends anyway.

It's brilliant by United. No matter what really happened with the transfer, United could go back to DDG and say, "Listen, you don't want to go to Real. They didn't value you enough to make this deal happen. We think you're worth more. You're our Player of the Year, etc, etc."

Well, DDG wasn't making shite, like 35,000 a week and now he's making like 200,000. So he has long term security now barring any freak injury.
He also likely had a loyalty bonus or a clause that will see a percentage of the transfer fee go to him should he be sold, which will put much more cash in his pocket if he is sold, for what will be exponentially more than what United would have gotten for him originally. If he had been a free transfer that's money he would have essentially lost.
Honestly this was a no-brainer for DDG and United.
