Andrew Jackson was said to be as stubborn as a jackass by his political opponents. To thumb his nose at them, he adopted the jackass as his mascot. Andrew Jackson pretty much made the Democrat Party, so they kept the symbol after he left office.

I think the donkey and elephant were popularized by Thomas Nast (a Republican)
