I think part of it is his New York roots. They like to talk smack.
His replies should not be personal. But more general something like, "how did those celeb opinions and money work against me work? Listen to all the losers cry."
Trump needs to be smarter, less reactive and grow thicker skin. Pick his battles. Obama was a thin-skinned little pussy and the country rejected his crap.
Trump should utilize his surrogates to point-out Hollywood's many sins.

Come on now, she's a hell of an actress. A misguided and deluded ideologue maybe, but she unquestionably knows how to act. I can't for the life of me understand why y'all keep going after her abilities as an actress when it would be so easy to tear down her fallacious statements without it.

He is going up aginst some the worst propaganda imaginable by the Hollywood elite and the MSM. He absolutely had to do this during the campaign to win and he still will have to do some of this going forward. He is explained his desire to get out front and fight this propaganda during the campaign. He always wants to squash the propaganda before it grows roots because at that point it is extremely hard to recover.

No, I'm pretty sure he's just obsessed with the spotlight.
And for whatever reason, our country chooses to keep that spotlight on Hollywood. So trump has made it a mission to take some of it away from them so that he can redirect it towards his own vision and goals.
I don't particularly like everything about his social media communication style, but let's at least be honest about what he's trying to accomplish

He looks like an entitled melting snowflake in need of a safe space, to be completely honest.
He needs to grow a pair. The whole world was wondering what he was going to say this morning and he got baited and performed for the crowds like a circus monkey. He called Meryl Streep, "over-rated." We all knew he would respond this way. He is completely predictable at this point. He might not have even wanted to engage it, but he had to perform for the crowds who wanted him to stick it to the Hollywood elites.
