They can't, they're narrow body A321s, they don't have any A321XLRs that can do runs from NYC to LHR with the extended range.
The P-8 above your post is a 737. It'd cost beaucoup bucks to figure out how to jam the electronics, weapons, etc., into a completely different airframe.

One problem. Spirit doesn't own the majority of its fleet. They're leased, they will be repossessed or will sit in a desert boneyard until a bankruptcy settlement is reached

Yes Atlas, Kalita and some others have a business model to haul military personnel and cargo worldwide. And they largely manage to stay profitable doing so.
The big US carriers like United, Delta and AA participate in the CRAF (Civil Reserve Air Fleet) to meet surge demand for military buildups like during Desert Storm.
I see no need to throw money at Spirit when other companies already meet these needs, and manage their businesses better.
