In Jefferson's day and the conflicts leading up to it, the all men being equal was in the context of the nobility vs commoners.

In England not so long before, if a commoner did not step off of the plank sidewalk to make way for a noble, they could be hanged. It wasn't an idle threat.

Jefferson's Declaration was to establish that in our new nation, people would not be stratified at birth, Royal vs Common, as was the case throughout Europe and virtually everywhere else. That is what the reference was. We would not be a monarchy, we would be a republic.

They are endowed with certain inalienable rights, life, liberty, and the pursuit of happiness.

That is the equality that is self evident.
