Have we ever shut down our country and destroyed people's lives over anything else with a 1% death rate? We still driving cars right? We shutting down for flu season?

Death isn't the main issue, it's the organ damage that is. Many infected Americans who survive this virus will have lasting, serious organ damage - kidneys, lungs, heart, brain, etc. that could affect them for the rest of their lives. That will in turn then pose a burden on healthcare (and all sorts of other burdens to the nation) for decades to come.

People keep talking death % as if it's the only factor at work.

Link on evidence substantiating this claim? I've heard people talk about it but haven't seen anything published.
