Found himself, took the red pill, and went back to speaking uncomfortable truths.
Its really hard to beat everything on Dark Fantasy for me, that was one of the few albums of the decade worthy of being listened to in full.
But if we're just talking single songs, easily Kanye's most underrated & one of his best is Hold My Liquor, the production is truly unbelievable, that guitar riff is unlike anything I've ever heard in any other song.

His best song, to me, by far, over the last decade or so, and quite possibly one of the most original songs written in recent memory. Justin Vernon of Bon Iver is the reason for most of the songs lasting sound, but the industrial mech beat is the basis for it all, and I assume Kanye wrote that.
Its his best work.
