Don't know but I think it's in the carp family. Very bony but the ribs are pretty tasty.

Supposed to be good if cleaned properly, type of carp.

Goo is a different fish, freshwater drum.

Buffalo is like a freshwater drum. Their ribs in hot grease is the shite. Very tasty.

Some people eat it here, too.

Some people also eat chitterlings.

Some people here in north Texas say they are good to eat when prepared right. I have caught a few and they’ll hit a crankbait like a train and give you a good fight. It’s disappointing when you get them close enough to see that it’s not a bass.

This. They sell cheap and I remember my parents buying them. I also remember all the damned bones, and candidly did not remember anything that special about the taste to make putting up with all the bones worth it.

When I was younger my dad and I would gig fish in the winter time in the creeks around us. One of the old timers always wanted us to bring him a few carp. He would take the meat bones and all and cook them in a pressure cooker then prepare them like salmon patties. Best I can remember they were really good.

Used to seine for them. Went with a neighbor, an old man and his two teenage sons. The old man and his boys would carry home three or four tote sacks of them for the freezer.....I took home enough for supper. Cleaned/cut up properly, deep fried and eaten while hot..not bad.

Here on the Clinch River in Virginia, there is a special shooting season for buffalo. It's only about two weeks long and to the best of my knowledge, this is the only place in the United States where you can "hunt" buffalo fish with a rifle. The object is NOT to hit the fish, but to hit adjacent to it so it is stunned and your partner can then get it before it regains its senses. There are some big ones in the river, too. It's kind of funny looking to see these elevated hunting stands out in the middle of the river, but this has been going on for years here. It's a long tradition that the game and fish department still recognizes.

Never heard of this hunting practice. Sounds fun!
I think the use of a seine was/is illegal. Not sure.

I've never done it myself. Seen it a few times, though. It's not like deer hunting at all. These guys are shooting down into the water as close as they can to the fish without hitting them. They are shooting at fish within 15 or 20 feet from their elevated stand. They're not taking shots like Troy Landry from 100 yards away, trying to hit the quarter size kill target. These buffalo are swimming upriver during the spawn and the guys are stunning them when the buffalo (drum) swim by their elevated stand.

I have had the ribs fried and on da pit both good. I boiled the puddin outa one and carefully took all the bones out it made good boulettes but was very tough picking all the lil bones out.

Old black man at the Fish market asked me today if I was buying Buffalo. I said I don’t know, thinking about it. He told me I best be bringing a sack of bread home with me in case those bones get caught in my throat.
