I like AJ...don't like catching the bastards though 'cause who wants to work that hard??? Just kidding....they are great on the line and the table....but everyone has their own tastes.

I thought I read here a few days that the Cobia bite was off the chain this year????? And I have always been under the impression that y'all catch Tuna and Wahoo in July and August and September???? Hell, if there are Cobia, Tuna and especially Wahoo about the place my question is why anyone would frick with Snapper???? If there are Wahoo about speed trolling plugs is about as much fun as you can have on a boat with your britches on....

I would love to get my hands on some Cobia. Always in the mood to catch Cobia. They’re not that far offshore this year either

A good use for Amberjack (and Cobia) after it has been frozen is in a gravy like Gumbo or Courtbouillon. Cut in chunks it holds together and soaks up the gravy....very good.

What's the recipe on that fish dip? I did one a few weeks ago that had a mayo/sour cream base that was meh, looking to try something different.

We get a brief shot at some Kings in Sept. Gag Grouper season opens as well. We can only keep Red Snows atm. Again not worth 30 mile trip. We get our first Snook season in 3 years because of red tide. Gulf will cool off to 85ish and the bite is back on. So yes c’mon September.

Make sure you cut out the redline (or any red) before freezing it. Vacuum seal it. Keeps for a good while.


For cooking when fresh:
- Sliced thin sashimi (think yellowtail)
- Poke bowl
- Grilled medium
- Sliced 1" thick and blackened

Later on:
- Grills/Bakes well
- Smoked Dip like above (smoke it, shred it, light mayo, olive oil, jalapenos, purple onion, cilantro, salt pepper etc to taste)
- Smoked dip done in a food processor (many options online)
- Hell, fry it


Also makes a fine Ceviche....even Jacks make a fine Ceviche if the beer is cold enough....

I would say so, someone posted a "What did I catch" off the a pier in Grand Isle. Pictured was a nice Cobia on the dock!
