I freeze the filets first. Put them on cookie sheets with was paper in the deep freeze then vacuum seal.

I have the cabelas commercial grade. It’s a stainless steel food saver on steroids. Has worked great and puts a double seal on the bag has a wet and dry setting. Also higher duty rating so you hint have to let it rest when doing many batches. Would love to step up to a chamber vac but sometimes you need to freeze longer things and that’s better done with a roll.

Chamber seems to be the way to go if you have a good spot to place it and use. Might be clunky to take in and out of shed or closet.
I bought a Weston through Costco and it has been a champ. No issues with any liquid from the fillets.

OP can try to hang off the counter and leave just the sealer and the small part of the bag being sealed on the cabinet.

My food saver is an exercise in futility with anything wet. I’ve got a JVR chamber vac on the way and a spot in the pantry ready for it. People tell me it’s great for fish, we’ll see

OP get a chamber vac. I went JVR vac 100 and use code fireandwater for $100 off if its still works. Has been for a cpl of years.
