I always oil the outside and shake a dry rub on the turkey. Some does come off, as evidenced by the residue in the bottom of the pot afterwards, but not all.

It really adds a kick to the seared skin on the outside.

You gotta try it Pec.

Most of it stays on. Makes the skin seasoned chrispy tasty.

As MJ said. Some falls off but most stays on skin.
