Bookmarked this when you posted it. We usually do our brown gravy, which is great. We tried this tonight. Turned out really good! Thanks for sharing!

Looks great. Makes me wanna make a hunt. I usually add a spoon of sugar to curve the acidity and and use a BUNCH of Vidalia onions. Makes for a little sweetness in the piquante, which everyone seems to enjoy.

This recipe has two spoons of sugar, I use 3 cause I multiply the recipe by 1.5

Have to cut that acidity like you said

Side note to make your rats taste better.

When cutting them up. Spots around the neck and under the front leg arm pits, There are glands there. You will see them very easy. Just cut them out. Taste even better that way.

I've had to work every weekend since the season started. Tomorrow I'm going to my favorite spot to get me a mess of squirrels, and try this recipe.

Another tip cooking a sauce piquant. When you add water or stock, bring it to a boil. Then cut back your firs to simmer. Don't stur. After about 10 minutes, any and all oil will come to the top. Just skim it out and start cooking.
