I have killed bout 6 axis over the past several years. I grind everything but the straps and loins. My wife uses it just like beef ground meat, mixed with nothing, it is great. I have learned that the loins and straps need to age a little to be tender. I'll usually throw a pack in the fridge for a week to age a little before I cook it, after that it cuts like butter. I would have zero complaints if axis took over all of Texas and I never shot a other whitetail.

The last one we steaked out everything we could and did 100% pure grind with no additives. My wife only wants me to shoot axis and red deer from now on.
