Sheephead taste great. They are a bit of a problem to filet, but they are delicious fried. I have never baked or grilled sheephead. You can also cut off the head, gut, and scale them wrap them in cheese cloth and boil them with or without crab boil. If you do not use crab ball, you can use them to make "stuffed crabs".

We ate some sheeps tonite. I cut the filets in strips, dredged them in milk & egg wash, battered them in a combination of seasoned fish fry and corn meal then fried them in a cast iron skillet on my gas grill. Absolutely delicious as usual. Nice and crispy with flaky white meat I can't understand how some people think they are trash fish. They just don't know any better.

I usually use them for fish tacos. Pan sauté in olive oil with blackened seasoning or seafood magic. Tortilla with lettuce and the Louisiana Fish Taco sauce

A great eating fish as others have said fry, bake etc anything you want I have even fried the small ones whole like perch after scaling. I learned to clean fish on those miserable bastards as my dad wouldn’t let me mess up his trout.

I think all the methods have been mentioned by now, but sheepshead are a dang good eating fish. I get the sentiment of "using them for a krab cake is for lesser fish", but they make a cake just as damn good as a blue crab does.
There's not much you can't do with sheepshead. Can't wait to start stacking em in a couple months.
For those saying they're hard to clean, there's a couple good YouTube videos showing how to quickly (relatively) clean them. Not bad once you get rolling.
