I used to throw them back too until I learned an easy cleaning method yesterday from my Brother-in-law.

Start by finding the upper end of the ribcage which is along the faint line that runs longways down the fish's body. With an electric knife puncture straight in and then follow the line down the body and then make a hard turn down to the anus. See diagram below. Then filet it working from head to tail like you would any other fish. Just stay above the ribs on your first cut and they're easy to clean. On larger sheepshead, leave the skin and scales on and grill them. On smaller ones, filet the skin of and fry them. YUM!

EDIT: The person who posted the youtube link a few posts back. That's basically how my Brother in law cleaned it, just he cut down the upper-side of the ribcage first.

If you've fished with Bass, Race and Ladd, you've kept em.

Tough to clean, very nice white meat. Clean them backwards with an electric knife just like a tiggerfish

Yep! We got on em a few years back in Grand Isle on the bridge. Caught so many I had to go "borrow" a shopping cart from Sureway to load them up. If you grab them in the eye sockets, turn them backwards there is area between the dorsal fin and the scales that is easy to go thru. Stay away from the ribs, scoop the meat out. If you do it right, when your done it doesnt look like you even cleaned it. But, good eating.

Toss em back. I prefer trout and redfish under 20" for eating. I have friends say sheephead is good to eat but I will stick with trout.

I keep every one of them spiny bastards. I can clean them pretty quickly and the meat is fantastic. I got so good because my dad made me learn on them. I was not allowed to mess up his trout
