I've had some tough arse tenderloin. I've cooked necks before and wasn't crazy about them. Like I said though, a big one ill keep and give it to a neighbor of family member that wants it. Just because I don't wanna eat it doesn't mean I want it to go to waste.

Now 150 bar fish and likely I'll butcher up several and just throw them away.

someone posted a video of a guy cleaning redfish in Cocodrie on here that you need to see (if you haven't). Don't know what type of knife he uses but he was/is awfully fast.

If you mess up becasue you are going too fast, you should slow down. We have guys that try and go to fast every year on our annual trip. Always tell them, if you cant do it right, get off the knife, and go get me a beer.

I got paid to skin deer on the weekends and holidays for 3 deer seasons in college. It was a big place (~6000 acres), overrun with does. They had to kill 100-150 a year for a couple years. I skinned damn-near all of them, and about half as many hogs, no telling how many ducks and squirrels too. For my services I was given a 12'x12' camp with a shower and a stove, and could shoot as many does as I wanted. Most of the hunters were a bunch of rich guys, so they tipped me a little every now and then. Most of the cash I made came from betting guys I couldn't skin deer, squirrels, ducks, etc. within __ minutes. Made a good bit like that.
